Zucchini Pizza!


We have a family pizza and movie night every weekend. It varies between Friday and Saturday, because of activities, but it's one of our favorite family traditions! For the past few years, I've been making flour crusts for the kiddoes and "zucchini pizza" for my Hero and me. No, you can't eat it with your hands, but once it is baked and crispy, I serve it in a bowl, drizzled with olive oil, hot pepper flakes, and freshly chopped basil. It's delicious and nutritious!

Directions: Cut 1 or 2 zucchini into round slices and place on a pizza pan that has been sprayed with olive oil. Sprinkle the zucchini with garlic and Italian seasoning. Preheat your oven to 415 and bake the zucchini for 10 minutes. Remove from oven, top each round slice with pizza sauce, and cover it completely with your favorite toppings! BBQ chicken and red onions, Pepperoni and Sausage, Ham and Pineapple. Return to the oven for 10 more minutes and serve hot! (You can also add cheese if you are eating dairy - but it's great without!)
